Banana Bread

Kappa Recipe

Ingredients

  • 3 very ripe bananas

  • 115g butter

  • 150g unrefined sugar

  • 3 eggs

  • 115g T65 “fluid” flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 tsp turbinado sugar (for sprinkling on bread)

  • 1/2 tsp salt

  • 80g chocolate chips

Directions

  • Mix all-purpose flour, baking powder, baking soda, cinnamon, and salt.

  • Mash the brown bananas with a fork until they are smooth.

  • Melt the butter in the microwave.

  • Mix the bananas and sugar together, and add the melted butter and vanilla extract.

  • Add the dry mixture to the banana mix.

  • Add the eggs

  • Add about 80% of the chocolate chips into the paste.

  • Pour the paste into the mold, and sprinkle with turbinado sugar.

  • Top with the rest of the chocolate chips.

  • Bake at 175C/347F for 40min until brown/cracked, toothpick comes out clean.
